Recipe: No Bake Energy Bites.

Do you know that feeling when you actually recreate something you found on pinterest? I have been pinning food like a MAD woman recently. The reason? I have been on the GM cleanse the last week and all I can think about is FOOD FOOD FOOD. *More on the cleanse on Monday!*

Today I whipped together some of these No Bake Energy Bites, that are healthy and perfect for an on the go DELICIOUS to the max snack!

All you need is:
  • 1 cup (dry) oatmeal (I used some plain "quick oats")
  • 1/2 cup peanut butter
  • 1/2 cup ground flaxseed or wheat germ
  • 1/2 cup chocolate chips (optional)
  • 1/3 cup honey
  • 1 tsp. vanilla
  • Method:
    Stir all ingredients together in a medium bowl until thoroughly mixed (this will take a little while since it is pretty thick with the peanut butter and honey). Then leave it in the refrigerator for half an hour. Once chilled, roll into balls of whatever size you would like and feast away!!!! Unless you have self control (which I lack) then you should store them in a container to grab and go the rest of the week).
